HEALTHY SUMMER SNACK

Now that summer is here, I know I'm hearing it more as my kids come in and out of the house while playing.

"Mom, can we have a snack?"

I wish I could say I reach for the the bowl of "God's candy" every single time (you know, fresh fruit piled high in a gigantic bowl in the middle of the table). But alas, sometimes Little Debbie just won't mind her own.

But I am striving for healthier cooking and a more plant-based diet. When I try new recipes these days, they're usually along those lines (so if you have any you know I need to try, do tell).

One of the snacks I make for my kids that they absolutely love are Fruit Chewies. Even my 17mo can't resist them. And they freeze well, which I love. You can find my original post, complete with recipe, here.

And speaking of healthy eating, when we drove to family camp a few weeks ago, it was located right down the road from a large cattle farm. Carl and I had previously noticed the line of calves that were "crated" for veal. This time, however, it didn't go unnoticed by our kids, as one calf had broken free and Carl and I were spontaneously saying, "Run! Run like the wind, little fella." ;)

Olivia wanted to know why all the calves were crated. We try to answer honestly with our kids, so I gave a watered down, "There are different kinds of beef that people purchase for cooking. Veal is one of them and it requires younger animals."

Liv thought for a moment, then the lightbulb went on.
"You mean,..........they're going to,........kill them for meat?"
"Sadly, yes."

She paused and thought, paused and thought, and then...........
"CURSE THEM!"

Okay, clearly we have some teaching to do regarding "cursing" others (there goes our Parent of the Year award.) But,...okay, I admit. We had to giggle just a bit at her spontaneous outcry.

Oh now I feel like a real dummie...I had no idea that's where veal came from. I actually never really thought about it because it's not something I eat anyway, but now that I know...ewwww, gross!

Hahaha! Curse them. At least she's passionate! You may have a future vegan on your hands! Unless she actually decides to try veal, in which case I'm sure she'll change her mind. For the record, I totally think veal is sad, and I feel really bad for those cows, and I don't ever eat it. Well, except for the veal brats we used to have once a year which were divine. I'm a giant hypocrite, aren't I?

I usually stay away from veal, but occasionally I'll have some with baby seal gravy and spicy California Condor drum sticks. ;)

pone.....you know that me being a hunter and understanding the cycle of life and need for proper conservation, I have no problem killing and eating almost anything. However to this day I refuse to eat veal due to the way they are raised. I'll check the snack recipe later

I found a recipe from Rachel Rays website and it is called Broken Florentine Lasagna. It is filled with dark greens which is very healthy. Easy to do and very tasty.
It is on her website that goes along with her daytime show. Try it I think you will like it.

Hey, that looks like a GREAT recipe. I will have to try it. Talking about healthy recipes, let me introduce you to "Lickety-Split Meals". That is a great cookbook. It is by Zonya Foco,RD She is a nutrition expert and my friend who is a nutritionist HIGHLY recommends it. I love it. The recipes are great and a lot are done within minutes:) I do believe she has a website to:http://www.zonya.com/healthy_recipes.html
